Ok, I must have missed this somewhere.

How exactly is Casting Ability used In gameplay?

Typically CA is used to determine the "strength" of the spell, EX,  

Acid Arrow:=
1 extra round for CA 4–6
2 extra rounds for CA 7–9
3 extra rounds for CA 10 or greater


Advanced Spectral Phantasm
"Otherwise, this illusion can inflict real physical damage: 1d8 hp per CA level per round to each victim. "

Animate Objects
duration: 6 turns per CA level
 


As you see, the CA is used in the Strength/Duration of the spell.

3.5-based systems would call it Caster Level.
It's usually equal to your class level, but some classes advance spellcasting at slower rates.

It's worth mentioning that how CA affects a spell, if at all, is given in the specific spell description. If nothing is said in the description, CA has no impact.
