Why are dæmons undead?

I've looked at the stats and I now realize that every daemon is list as undead type 13; why is it that way?

I believe it's so that they are on the Cleric Turning table. 

Personally, I consider Undead and Demons/Devils beings from an alternate plane (either Negative material, or in the case of Demons/Devils, the infernal planes).

They're not really undead, just turnable by clerics. It's the same as demons and devils being treated as "Special" on the turning table in AD&D.

Something else that many people don't realize about 1e AD&D is that paladins can be turned as "special" undead by evil clerics (and also take damage from unholy water)!
