p334 refers to ghuls as shapeshifters and calls out "their natural form" -- but I can't seem to find anything else describing, limiting, or governing their shape-shifting. I am guessing if they are like folkloric ghuls, they can turn into hyenas, jackals, and buzzards? Maybe people too?

They are powerful and ancient beings. All you suggested and more!! Though I don't see them as mixing with normal people very often.... Great suggestions!

They say that in the cold north woods where the North Wind blows there is a small village wherein lives a Ghul in its natural form. It is encountered in far-flung locales throughout the year where adventurers and their treasure gather, but always it retreats to its frozen arboreal lair. They say its true form is too horrifying to face directly, but its likeness has been captured by the brave . . . or the foolish . . .
